Ingredients
Dates & Filling
- 125 gm Medjool Dates pitted. medjool dates are recommended for their size and sweetness., whole
- 1/4 cup Tofu cubed. silken tofu may be too soft., firm
- 1/4 cup Almonds and oven-roasted for enhanced flavor. you can also use slivered almonds., blanched, peeled, salted
Bacon & Assembly
- 4 slices Bacon thick-cut bacon works best; cut crosswise into approximately 1-inch pieces.
- 4 Wooden Toothpicks soaked in water for at least 30 minutes to prevent burning.
Optional Garnish
- 4 slices Multigrain Bread for serving (optional), toasted
Instructions
Prepare the Dates
- Make a small incision along the side of each date. Stuff each date with a small piece of cubed tofu and a few almonds.
Wrap with Bacon
- Wrap one piece of bacon around each stuffed date and secure with a soaked toothpick.
Chill and Bake
- Place the bacon-wrapped dates on a baking sheet lined with parchment paper. Cover and chill in the refrigerator for at least 30 minutes. This helps the bacon to crisp up nicely during baking.
- Preheat oven to 360°F (180°C). Remove dates from the refrigerator.
- Bake for 15-20 minutes, or until the bacon is crispy and the dates are heated through. Keep a close eye to prevent burning.
Serve
- Serve immediately. The bacon-wrapped dates may be served on tiny rounds of toasted multigrain bread for an elegant presentation.
