Ingredients
For the Gol Gappe Shells
- 1 cup All-Purpose Flour
- 2 cup Semolina suji
- 1/2 tsp Salt
- Water as needed Water to make a firm dough
- Oil as needed Oil for deep frying
For the Filling
- 1 cup Yogurt curd, hung yogurt is preferred
- 1/2 cup Tamarind Chutney sweet
- 1 cup Chickpeas boiled and mashed, kabuli chana
- 1 tbsp Coriander dhania, roasted
- 1 tbsp Cumin jeera, roasted
- 1/2 tsp Chili Powder red, roasted
- 1/2 tsp Salt black
- 1/2 tsp Salt or to taste, table salt
- 1 tbsp Sugar or to taste
- 1/4 cup Chickpea Noodles crispy chickpea flour noodles
Instructions
Prepare the Gol Gappe Shells
- Mix all-purpose flour, semolina, and salt. Gradually add water to form a firm dough. Knead well for 5-7 minutes. Rest the dough for at least 30 minutes.
- Roll out the dough thinly. Use a small, round cutter or bowl to cut out small circles.
- Heat oil in a deep pan. Carefully fry the gol gappe circles until golden brown and crispy. Remove and drain on paper towels.
Prepare the Filling
- In a bowl, whisk together the yogurt, black salt, table salt, and sugar. Set aside.
- Mash the boiled chickpeas until smooth.
- Combine the roasted coriander, cumin seeds, and red chili powder. Set aside.
Assemble the Gol Gappe
- Gently prick the cooled gol gappe shells. Fill each shell with mashed chickpeas, yogurt mixture, and sweet chutney.
