Recipe Notes
Expert Tips for the Best Tamatarcha Aaran
- For a richer flavor, use a mix of both fresh and dry red chilies, adjusting the amount to your preferred spice level.
- If using besan (gram flour) instead of chana dal, add it towards the end of the cooking time to prevent it from becoming clumpy.
- Adjust the amount of water to achieve your desired consistency—a thicker sauce is perfect for dipping rotis.
- For a smoky flavor, consider roasting the tomatoes before adding them to the pan.
