- Rice short and thick -200 gms
- 2 Vegetable Stock ltrs
- Olive Oil
- 50 gm Butter salted
- Bell Peppers red green and yellow - 2 each
- Tomatoes chopped - 2 kgs
- 1 kg Onion red chopped
- 25 gm Garlic

Sauté Aromatics and Tomatoes
- Heat olive oil and butter in a large paella pan or wide, shallow pan over medium heat. Add the chopped red onion and minced garlic, sautéing for 5 minutes until softened. Add the chopped tomatoes and cook for 30 minutes, stirring occasionally, until the tomatoes have softened and released their juices.
Toast the Rice
- Add the short-grain rice to the pan and toast for 2-3 minutes, stirring constantly, until the grains are lightly golden. This step adds depth of flavor.
Simmer the Paella
- Pour in the vegetable stock (and saffron threads, if using). Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until the rice is cooked through and the liquid is absorbed. Do not stir during this time.
