Ingredients
For the Chicken Marinade & Biryani Base
- 500 gm Country Chicken also known as naatu kozhi; cut into 1-inch pieces
- 1 large Onion thinly sliced
- 5 Chili finely chopped, green
- 2 tbsp Ginger-Garlic Paste
- 1 tsp Turmeric Powder haldi
- 1 tsp Chili Powder red
- 1.5 tsp Salt or to taste
- 50 ml Oil
- 50 ml Ghee clarified butter
- 2 inch Cinnamon Stick
- 5 Cloves
- 1 tsp Fennel Seeds saunf
- 2 Bay Leaf
- 1 Curry Leaf Sprig
- 2 Mint Leaves
- 1 large Tomato finely chopped
- 1 cup Cumin Seeds jeera
For the Rice
- 2 cup Basmati Rice or jeera samba rice; rinsed and soaked for 15 minutes
- 1 cup Coriander dhania, finely chopped
Instructions
Prepare the Rice
- Wash and soak basmati rice (or Jeera Samba rice) in water for 15 minutes. Drain well.
Prepare the Spice Blend
- Coarsely grind the cloves, cinnamon stick, and fennel seeds.
Sauté Aromatics
- Heat 50 ml of oil in a pressure cooker. Add thinly sliced onions and green chilies; sauté until onions turn pink.
Build the Flavor Base
- Add bay leaves, the ground spice blend, curry leaves, mint leaves, and finely chopped tomato. Stir well.
Cook the Chicken
- Add the cut country chicken and stir well to coat with the spices. Add ginger-garlic paste, red chili powder, turmeric powder, and salt. Add ½ cup of water and pressure cook for 5 whistles. This allows the country chicken to cook thoroughly.
Simmer the Chicken
- Once the pressure is released, add 5 cups of water to the cooked chicken. Bring to a boil.
Combine Rice & Chicken
- Once the water is boiling, gently add the soaked rice, finely chopped coriander leaves, and desi ghee (clarified butter). Adjust salt and spices to your liking.
Final Pressure Cooking
- Pressure cook on high flame for 3 whistles.
Rest & Serve
- Allow the pressure to release naturally. Gently stir the biryani. Serve hot with your favorite raita (yogurt dip).
