Ingredients
Potatoes
- 3 medium Potatoes and diced into 1-inch cubes, boiled, peeled
Spices & Aromatics
- 1 tsp Mustard Seeds rai
- 1 sprig Curry Leaves
- 4-6 Chilies green, roughly chopped; adjust to your spice preference
- 1/2 tsp Turmeric Powder haldi
- 1 1/2 tsp Salt or to taste
Instructions
Preparing the Potatoes
- Boil the potatoes until tender. Peel and dice them into 1-inch cubes.
Sautéing the Aromatics
- Heat the oil in a pan over medium heat. Once hot, add the mustard seeds. When they begin to splutter, add the curry leaves and green chilies. Sauté for about 15 seconds until fragrant.
Combining and Simmering
- Add the turmeric powder and salt to the pan. Mix well. Then, add the diced potatoes and 1/2 cup of water. Stir to combine. Cover the pan and cook for about 8-10 minutes, or until the potatoes are heated through and the sauce has slightly thickened. If the mixture becomes too dry, add a little more water.
Serving
- Serve the Batata Bhaji hot as a side dish with puris, chapatis, or rice. It also makes a delicious snack on its own. Consider serving with garlic chutney or peanut chutney for an extra flavor boost.

Expert Tips for the Best Batata Bhaji
- For extra flavor, add a pinch of asafoetida (hing) along with the mustard seeds.
- If you prefer a spicier Batata Bhaji, increase the number of green chilies or add a small piece of finely chopped ginger.
- Don't overcook the potatoes; they should be tender but still hold their shape.
- For a richer flavor, use ghee (clarified butter) instead of oil.
