Ingredients
For the Chhole (Chickpea Curry)
- 1 cup Chickpeas dried, soaked overnight in plenty of water
- 2 Large Onions finely chopped
- 1 cup Tomato Puree
- 2 Bay Leaves tej patta
- 1 inch Cinnamon Stick
- 1.5 tsp Salt or to taste
- 0.5 tsp Chili Powder adjust to your spice preference, red
- 0.5 tsp Garam Masala
- 1 pinch Asafoetida hing
- 1 tsp Coriander Powder dhania
- 1 Indian Gooseberry amla, raw; can be omitted
- 1 cup Radish for garnish, grated
- 0.5 cup Carrot for garnish, grated
- 2 Chilies green, slit
- 2 tsp Chana Masala optional
- 2 tbsp Vegetable Oil for the chhole
- 1 tbsp Ginger Paste
For the Bhaturas
- 1 cup All-Purpose Flour maida, refined flour
- 0.5 cup Whole Wheat Flour atta, whole
- 0.5 tsp Sugar
- 0.5 tsp Salt
- 1 tbsp Vegetable Oil for the dough
- 0.5 tsp Baking Soda
- 0.5 cup Yogurt or sour curd
- Vegetable Oil for deep frying
Instructions
Prepare the Chhole
- Soak the chickpeas overnight. Pressure cook the soaked chickpeas with 2 cups of water, the amla (if using), and salt for 3 whistles. Reduce heat and simmer for 15 minutes. Let cool.
Make the Chhole Gravy
- Heat oil in a wok. Add asafoetida, bay leaves, and cinnamon. After 15 seconds, add ginger paste and saute until fragrant. Add chopped onions and saute until browned.
- Add tomato puree and cook until bright red. Stir in coriander powder, red chili powder, garam masala, and chana masala (if using). Stir constantly.
- Remove the amla from the cooked chickpeas (if using), mash it, and add to the gravy. Mix the gravy with the cooked chickpeas thoroughly. Simmer for 10-15 minutes, stirring occasionally.
Prepare the Bhatura Dough
- In a large bowl, combine all-purpose flour, whole wheat flour, sugar, salt, oil, and baking soda. Add yogurt gradually and knead into a soft, slightly sticky dough. Brush with oil, cover, and let ferment for at least 2-3 hours.
Prepare the Garnish
- In a bowl, combine grated radish and carrot. Add a pinch of salt and ½ teaspoon of lemon juice. Mix well.
Fry the Bhaturas
- Heat oil for deep frying. Roll small portions of the dough into oval or round shapes. Carefully place in hot oil and fry until golden brown and puffed, flipping to fry both sides.
Serve
- Serve hot Chhole Bhature garnished with the radish and carrot salad.
