Ingredients
- 2 cup Mango Puree
- 2 tbsp Sugar powdered
- 1/2 tsp Cardamom Powder elaichi
- 1.5 strands Saffron Strands
- 1 cup Sugar or coating for coating, powdered
- 2 tbsp Sugar Syrup or topping for topping thick
- 1/4 cup Nuts ) chopped, 2tbsps tutti frutti, almonds, cashewnuts
- Glazed Cherries or decorate and silverwirk decorate
Instructions
Prepare the Topping
- Cook the sugar syrup, mixed nuts until dry and slightly caramelized. Set aside to cool.
Make the Mango Filling
- Blend mango puree, powdered sugar, cardamom powder, and saffron (with its soaking water) until completely smooth.
Cook and Cool the Filling
- Transfer the mango mixture to a non-stick pan and cook over medium-low heat, stirring frequently, until the mixture thickens considerably and is completely dry. This will take approximately 15-20 minutes.
Shape the Pankhuri
- Cool the mango mixture completely. Transfer it onto a lightly oiled parchment paper or silicone mat. Gently roll it out to about 1/4 inch thickness. Use a flower-shaped cookie cutter to cut out the mango petals.
Assemble and Decorate
- Place a small amount of the prepared topping on the center of each mango petal. Gently press to adhere. Dust the petals with powdered sugar. Decorate with glazed cherries and edible silver leaf (optional).
Serve and Enjoy
- Serve your Aam Ki Pankhuri immediately or store in an airtight container at room temperature for up to 2 days.
