We meet new interesting people – say friends of friends and always think ‘we should have them over’. The conversations with most friends who come into #bangalore ends at ‘let’s catch up sometime’. Some neighbours move out or have a baby and I really feel like having them over but then, I only make week attempts at making that happen. Why? Because I am inexperienced at cooking for a big group. But I have decided to entertain more because it is fun to meet in the comforts of our homes where children are involved too. Plus there is no hurry as we can stay as long as we want.

I have noticed with drinks, people spend maximum time on appetisers and the marinades/cutlets from #licious are just perfect for that. Licious is doing a wonderful job of quality as the meat is fresh and tender. I love the packaging too. It arrived in style.

I wouldn’t leave you all with just the pictures from this review of Licious products without a method and details, would I?

These pre marinated products are unbelievably easy to make. There is not much recipe to making it than there is technique. I for instance decided to roast/cook it in the oven as this method ensures that the juices/moisture stay within and the final outcome is juicy, crunchy and tender. The last 5 minutes I opened the foil and glazed with butter to deepen the colour. I tried the Naga Pops and Andhra chicken wings and the spicy sticky glaze in the Andhra version was to die for.

For the naga pops and Andhra murgh pakode:
Prepare oven at 180 and
Grill the chicken, turning and basting towards the end for about 10 minutes both sides until cooked through

The last few minutes that it is kept open in the foil leaves a caramelised crunch on the outside
I especially love the citrusy zest in the flavours. It’s ultimate.

Thank you Plattershare for introducing me to these products from Licious as I am now more relaxed about having people over and still serving a great line up of food. I am not stressing before or after … And that is the point right? to have fun? The best conversations anyway happen over the sink 🙂

Tips for throwing dinner parties :

– if someone offers help, say YES – salad, desserts and wines are the best thing they can bring to a meal
– concentrate on one complicated or time consuming dish and stick to basics for the rest
– clean as you cook and clear as everyone eats.
– make some dishes that can be made ahead of time.
– appetisers only party is the way to keep it casual and young
– if it is a big family group, feed the kids first and let them watch movie and sit down as grown ups.
– it does not have to be a show each time. Stop wanting everything to be perfect.
