Good Day Like Oats And Nuts Cookies
Most of us think that cookies made of any flour other than maida/all purpose flour does not taste good. But this recipe can prove them wrong.
I made these cookies only with oats flour, nuts, desi ghee and milk powder. They came up so tasty that i wanted to share them with everyone.
Ingredients:
60 gm Oats Flour(Finely Ground Oats)
25 gm milk powder
2 tbsp Sugar
1/4 tsp baking powder
1/2 pinch salt
1 tbsp milk
25 gm ghee/butter
1 tbsp each of Pista and Badam shavings(finely sliced)
Procedure:
Take all the dry ingredients in a mixing bowl. Mix them thoroughly. It is better if you sieve them once or twice so that they mix uniformly.
Then add the butter/ghee and gently rub against the flour with the finger tips to form a bread crumb texture.
Now add nuts to it and mix once.
Now add enough milk around 1 tbsp depending on the moisture content to make a dough. Do not knead the dough. Just gently mix to form a dough.
Now if the dough is moist and sticky then place it in the freezer for 5 min. Or if the dough is not sticky, then directly start making into cookies.
Make equal portions of the dough and make balls. You can use a weighing scale to divide equally. My dough is divided into 16 gm balls. But it can be done approximately too.
Now press the balls and make disc like shape without any cracks. Now make the good day cookies like arc design on them using a tumbler or glass.
Place them on a greased baking tray and place it in the freezer for 5 to 10 min.
In the meanwhile preheat the oven at 180C. After the oven is preheated place the tray in the oven and bake for 10 to 12 min till they turn golden brown in colour. Remove from oven and let them cool and store them in an air tight container and enjoy.
