Just as Biryani has so many variations, the story about its origin has even more variations and controversies. Some assume that Biryani originated in Persia, which is modern day Iran and travelled with the Invaders and traders to India while others sources say that Biryani was the creation of the same magnificent woman who inspired the Taj Mahal; Mumtaz Mahal, to feed the soldiers and so the cooks made a one pot dish – Biryani Rice.

So, where did Biryani really come from? Well, does the story of origin really matter? It is the grandeur, aromatic and exotic taste that really matters to the foodie.

Biryani Rice or just Biryani as people love to call it, is a one-pot Pan-Indian dish, which is the journey of transforming plain rice into a marvelous dish whose unique flavor comes from the meat and spices like saffron, nutmeg, cardamom, mace, cumin seeds, coriander seeds, bay leaves and whole lot of ghee and yogurt.

What Is Biryani Today?

Coming to the most interesting part; what biryani has become today. Variations are plenty and in so many ways, starting from the names; Hyderabadi, Awadhi, Calcutta, Lucknowi , Kasmiri, Arcot, Ambur, Donne and the list goes on. From Mutton Biryani, prawn biryani, chicken biryani to even a ‘vegetarian biryani’, which is essentially pulao.

Biryani implies that meat of any kind is being added to the rice. The original biryani is made with mutton; however, today we have options ranging from chicken, shrimps, prawns and yes Vegetables too so there’s really no limit to your imagination.

The Main Ingredients

Rice

This is one of the major ingredients in a Biryani, obviously. In different places, different kinds of rice are used in making biryani.

A long grain Basmati rice was the norm in Northern India, whereas shorter grain called as Seeraga Samba grown in Tamil Nadu was used in Southern India. Meat

A very essential (and non-negotiable) part of the biryani, the meat is what makes the biryani complete. Just like the rice is cooked prior to being cooked together with the meat, it’s important the meat be marinated.

Traditionally, mutton is used, but you can replace it with almost any other meat. You can have beef, chicken, shrimp, fish, or even just plain egg. 

Vegetables

This is something most people don’t expect in a biryani but then there is a vegetarian community and they should not be deprived to taste the wonders of the dish and so there is vegetable biryani, sometimes called as pulav or Tehari.

Again, depending upon the region carrots, beans, potatoes, cauliflower, and peppers go into the dish. You can also personalize it and add dry plums, beetroot, and jackfruit.

Spices

This is what distinguishes Biryani from any other rice dish. The quality, quantity and the way the spices are used gives variations to the biryani for eg.

Hyderabadi Biryani is spicy where as Andhara Biryani from the same region is not so spicy. Some traditional essential spices used cardamom, bay leaves, mint, coriander, cinnamon, saffron and rose.

Handi

If you want to be as historically (and flavor-fully) accurate as possible, you need to get a handi. This is what you will need to make the original biryani.

Once both the rice and meat are cooked separately, they’re layered in the handi. The bottom-most and top-most layer being the rice, with the meat and spices in the middle.

As all of you would know Biryani was bought to India at the time of the Mughal Dynasty. It was already a rage back in Kabul and Afghanistan which were the roots of the Mughals and they were generous enough to share it with the supremely talented Indian cooks of the Mughal Rulers here and thus the recipe was passed on one generation after the next though nearly five centuries.
It was bought to India as a complete non vegetarian package primarily using Mutton as the one and only meat to make it.
The Indian cooks experimented with Chicken and the vegetarian pundits learnt the recipe only to substitute vegetables, paneer and soya thus making Biryani accessible for people who did not and could not eat meat. In the other countries this delicious main course is tried with Beef, Pork and even game meat! I am bringing forward one such long lost but simple recipe.
Let us understand the concept of having Biryani. Let us understand WHY the Mughals made the recipe? Leave the seasoning out and analyze the ingredients – Rice and Meat. In the desert areas where water is a prime concern and there are no fresh vegetables and fruits available, the dwellers relied on meat for their livelihood.
Instead of cooking in two separate pans, one pot cooking was preferred and lovely aromatic substances were used to make food have a lovely aroma and taste divine!
This Biryani has 2 main ingredients Potato and Carrot (denoting the meaning of the word Tarkari or vegetables). However you can add vegetables of your choice and Paneer to it to make it more palatable.

4. Jackfruit (Kathal) Biryani

Thousands of years ago, before vegetarianism existed in India, people ate meat from animals like rhinoceros, wild boar, quail, and deer. With the rise of the caste system, certain vegetables like jackfruit, potatoes, and soybeans became “vegetarian meats,” substituting for chicken, mutton, beef, and pork.

Jackfruit (Kathal) Biryani

Many thousands of years back when there was no concept of "vegetarianism" in India, everyone ate meat. They caught game, killed and ate it and this included animals like Rhinoceros, Wild Boar, assorted birds like Quail, Pigeon and Grouse and of course the Royal Venison or deer meat which was one of the most treasured culinary delights.
With the advent of the caste system and associated conceptual turning around of the society, certain vegetables were treated as "vegetarian meats" and they were primarily used as substitutes of meat namely Chicken, Mutton(Goat meat), Beef and Pork. Some of these vegetables were Jackfruit, Potatoes, Turnips, Radish, Soybean, Avocado, Beetroot and Tomato.
Pure vegan products or "vegan meats" such as Tempeh and Seitan have come up to give vegetarians the same protein and nutrients animal flesh gives the "non vegetarian" population. I am very sorry to state here that there is an ongoing war between people who eat meat products and people who do not and each group tries to prove their stance and establish themselves as correct.
It is advisable to respect each other's individuality and adopt neutrality towards any preference in the edible product category.
Coming back to this delicious rice tongue pleaser, this is made the same way as you would make any non vegetarian Biryani with the only difference that we substitute Jackfruit as the primary ingredient and we cook the Biryani till the rice and Jackfruit take on the flavour of the added ingredients and the pieces of Jackfruit become juicy and succulent and the aroma of the lovely ingredients cooking in the handi pervades the whole house.
Believe me when I say that though you may call the preparation tedious but when you taste the final product you will close your eyes and revel in the various masala amalgamations which this Biryani is popular about.
This rice wonder was started in the Awadh province back in the 1800 when Nawab Wajid Ali Shah wanted something vegetarian as he was tired of eating meat but wanted the same taste and zayka or as we say "the subtle deliciousness" provided by the recipe!
