Brinjal Fry With Cream Of Onion

A lip smacking side dish made with Brinjals coated with the cream of Onion and fresh spices that is best suited to have with plain rice and Indian bread varieties. A very simple and easy to make side dish with less ingredients but very rich in taste.....

Ingredients
  

  • 12 Brinjals
  • 5 Onion
  • 1/2 teaspoon Cumin seeds
  • 1 1/2 teaspoon Red chilli powder
  • 1/4 teaspoon Turmeric Powder
  • 5 Cashews
  • Salt to taste
  • 3 tablespoon Oil
  • 5-6 Curry leaves for garnishing

Instructions
 

  • Wash the Brinjals well and wipe them to make dry. Cut them into thin long pieces.
  • Heat a heavy bottomed pan or a non stick wok with oil. Add the brinjals and fry them in medium flame till they become light brown.
  • While they get fried, in a mixie jar add the chopped onions, cumin seed and cashews and grind them to smooth paste without adding water. Transfer the paste to the frying brinjals and stir.
  • Add the salt, chilli powder and turmeric powder and fry till the oil separates. Garnish with curry leaves.
  • The rich and creamy Brinjal fry is ready to serve now.
  •  Note: While making the onion paste few heads of garlic could be added to get more spicy stuff. Adding cashews are optional. It gives a richer taste!!
