Pancakes can be healthy Too!! Yes, they can be. Using Wheat Flour in place of All purpose Flour (Maida), and dates in place of sugar and finally using organic coconut oil by replacing the refined oil is definitely a win-win situation to satiate your craving for sweet and a healthy breakfast. I was very particular that when I am making anything with chai seeds or organic coconut oil it has to be healthy and when I made this recipe, I kept replacing every ingredient with its healthier version.

Ingredients
- 1 bowl 100 gram of Wheat Flour
- 1 tbsp of Chia Seeds
- 1/2 Bowl 50 gram of Gram Flour (Besan)
- 1/2 teaspoon of baking powder
- 2 egg
- 3 bowl of water I used the same bowl for measurement - so its 1 (Water:1/2 (Flour) ratio)
- 5 dates remove seed
- 1 overripe Banana

Instructions
- Take Wheat Flour and Gram Flour and mix it with 2 eggs with the help of the spatula.
- Add Banana and Dates(Sugar replacement)
- Put it in mixer and grinder and run it for few seconds and keep adding water so that Banana and Dates are pureed and it forms a consistent lump free batter.
- Add Chia Seeds and Baking powder and set it aside for 2 minutes. Looks at the chia seeds which are now well soaked and for a gel like texture.
- Just put 1 tbsp of Coconut oil to grease the tawa( only once ) and all the pancakes (I made 4 of them) were made in this pan only without putting any more coconut oil.
- You will enjoy the crunchiness of chia seeds in every bite 🙂
