Banana cake is a very delicious way of using up those overripe spotted bananas. With a vanilla icing and topping of dry candied fruits, you can add a zing to your regular banana cake.

Instructions
Beat the sugar and butter well to form a smooth mixture. Add the eggs and beat well again.
Now mash the bananas and add them.
Mix the flour, salt, baking soda, baking powder, cinnamon powder and sift them. Add them to the wet ingredients and mix well.
Now add the buttermilk and vanilla essence and make a uniform mixture.
Grease a baking pan and dust with flour. Add the cake batter and bake in a preheated oven at 175 degrees C for 35-40 minutes. Your cake is ready.
Now beat the ingredients for frosting together at high speed to form a creamy icing. Remove the top crumbly layer of the cake and spread the frosting on top. Garnish with toasted walnuts and candied fruits.
