Banana cake is a very delicious way of using up those overripe spotted bananas. With a vanilla icing and topping of dry candied fruits, you can add a zing to your regular banana cake.

Ingredients
- 200 gm All purpose flour
- 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 1/4 tsp Cinnamon powder
- 1/4 tsp Salt
- 2 Bananas ripe
- 100 gm Unsalted butter
- 140 gm Powdered sugar
- 2 Eggs
- 1 tsp Vanilla essence
- 130 ml Curd -
For the frosting
- 1/4 cup Butter
- 2 cup Icing sugar
- 1 tsp Lemon Juice fresh
- 1 tsp Cinnamon powder
- 1 handful Walnuts to garnish
- 1 handful Candied fruits like orange and guava, to garnish

Instructions
- Beat the sugar and butter well to form a smooth mixture. Add the eggs and beat well again.
- Now mash the bananas and add them.
- Mix the flour, salt, baking soda, baking powder, cinnamon powder and sift them. Add them to the wet ingredients and mix well.
- Now add the buttermilk and vanilla essence and make a uniform mixture.
- Grease a baking pan and dust with flour. Add the cake batter and bake in a preheated oven at 175 degrees C for 35-40 minutes. Your cake is ready.
- Now beat the ingredients for frosting together at high speed to form a creamy icing. Remove the top crumbly layer of the cake and spread the frosting on top. Garnish with toasted walnuts and candied fruits.
