Today I am presenting a Colorful, Flavorful and an Aromatic Pacchadi. This Chutney tastes good when consumed with Idli / Dosa/ Upma/ Khichdi and hot steamed rice !!
Heat oil in a pan. Add the chopped cilantro, salt. Saute for a minute. Ensure that the green color does not change. Turn off the flame. Keep aside.
Heat oil in another pan. Add the seasoning ingredients one after the other. Allow them to splutter. Then add the chopped tomatoes, slit green chillies and salt to it. Fry until the tomato slices turn tender.
Now add 1 tablespoon of tamarind juice to it. Saute for a minute over a low flame.
Turn off the flame when the raw smell goes off.
Transfer the above mix to the sauted coriander mix and grind it into a smooth paste in a dry mixie jar. Adjust salt as per requirement. Do not add water while grinding.
Transfer it into a serving bowl. The Instant Kothimeera Tomato Pacchadi is ready to be served.
