About Wheat Flour And Sooji Bread By Autolyzing Method
My family loves bread, sweet and savoury sandwiches a lot. Bread is a regular and I have to buy bread loaf at least twice a week. I am a beginner in bread baking and i am trying to bake a good bread since long time.
Jasmina Parekh a professional bread baker and my dearest facebook friend, came to my rescue. She helped me create this amazingly tasty and healthy bread at home.

Ingredients
- 1 cup Whole Wheat Flour
- 1 cup Semolina or sooji fine sooji
- 1 tsp Salt or as per taste
- 1 tbsp Honey
- 1 tsp Active Yeast instant dry
- 1 cup Warm Milk plus extra luke
- 2 tbsp Olive Oil or butter or butter

Instructions
- Mix sooji and wheat flour and keep aside.
- Mix honey yeast and luke warm milk.
- Mix 3/4 of the flour to milk honey and yeast mixture. Mix thoroughly with a spoon, cover and keep aside for 30 minutes. This method is called autolyzing. (Do not add salt)
- After 30 minutes add the remaining flour and salt and knead the autolyzed dough. Add more milk if required.
- Using butter and milk alternately keep kneading the dough for 14-15 minutes. It should be a smooth and supple dough. Softer than a chapati dough. Cover with a damp kitchen towel and Keep aside for second rise, until the dough doubles in volume.
- (After 3 hours the dough was doubled, due to cloudy weather at Nashik). Lightly punch the dough. Roll the dough into rectangular shape like we roll chapatis (1/2 inch thickness) on a slightly greased counter.
- Roll the rectangular dough into a log and place into a loaf tin, lined with parchment paper. Cover with damn cloth and keep aside for 30 minutes.
- After 20 minutes, preheat oven @200C for 10-12 minutes.
- Milk wash the loaf and Bake for 25-30 minutes. Or till golden brown crust appear on top.
- Enjoy delicious home made Healthy bread.
