  • Heat the oil in a wok or large pan over medium heat. Add the mustard seeds and allow them to splutter. This releases their characteristic nutty flavor.

  • Add the curry leaves and dried red chilies. Sauté briefly until fragrant.
  • Add the peanuts and chana dal. Fry until they turn golden brown and crispy, stirring frequently to prevent burning.
  • Add the sliced onions and sauté until they soften and become translucent.

  • Reduce the heat to low. Add the salt, turmeric powder, red chili powder, sugar, and coriander powder. Mix well to combine.
