Sookha Gosht
Ingredients
- 1/2 kg Mutton
- 2 no Onion finely sliced
- 1 tbsp Ginger garlic paste
- 1 cup Thick Curd
- 1-2 tsp Salt or as per taste
- 1 stick Stick Cinemmon cinemmon
- 4 no No Clove
- 2 no Black Cardamom
- 2 tsp cardamom powder
- 4 to 6 no Black Pepper
- 2 tsp Red Chili Powder
- 1 no Star Anise
- 3 tbsp Desi Ghee
- 1/2 tsp Mace Powder
- 1 tsp Cumin
- 1 tsp Kashmiri Red Chili Powder
- 1 tbsp Coriander Powder
- 12 tsp Sugar
- leaves Coriander for garnishng

Instructions
- wash and dry with a cloth ,marinade with curd,red chili powder,salt,coriander powder,ginger,garlic paste,keep aside for 1/2 hour at least. heat the ghee in cooker and golden fry the onions keep out and add reaming ghee.
- add cumin,black pepper,cardamom,clove,star anise,mace and cinnamon saute and add marinated mutton stir constantly, cook till the water evaporates .
- now add cardamom powder,sugar,fried onion,kashmiri mirch, and 1 cup water,turn the heat slow cover and cook 14 minutes. garnish with coriander ,serve hot with paratha (laccha) or rumali roti....
Recipe Notes
Always take the mutton with bones,you can also add fresh cream or malai ,chopped almonds …
