  • Thoroughly wash and chop the spinach, fenugreek leaves, and amaranth leaves. Set aside.

  • Wash the chana dal and soak in water for 2 hours. This helps soften the dal and reduce cooking time.

  • Chop the tomatoes, potato, eggplant, pumpkin, and onions. Draining the soaked chana dal.

  • Heat the oil in a pressure cooker over medium heat. Add the cumin seeds and allow them to sizzle for a few seconds. This releases their aroma.
  • Add the ginger paste and sauté for about a minute until fragrant.
  • Add the chopped onions and sauté for 2-3 minutes until they soften and become translucent.
  • Add the chopped tomatoes and cook until they break down and form a mushy consistency. This creates a rich base for the curry.
  • Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well to combine the spices with the tomato mixture.
  • Add the drained chana dal to the pressure cooker.
  • Add the chopped eggplant, pumpkin, and potato to the cooker.
  • Add the chopped leafy greens to the cooker.
  • Pour 1 1/2 cups of water into the pressure cooker. Close the lid securely and cook for 5-6 whistles. Then, reduce the heat to low and simmer for 5 minutes. Turn off the heat and allow the pressure to release naturally.
  • Once the pressure has released, open the cooker carefully. Add the lemon juice and garam masala. Stir gently.
  • Using a spoon or a whisk, gently mash the vegetables and dal to create a slightly coarse or smooth consistency, depending on your preference.

  • For added flavor, prepare a green garlic tempering. You can skip this step and enjoy the Sai Bhaaji as is.
  • Finely chop the white and green parts of the green garlic, keeping them separate.
  • Heat a tablespoon of oil in a small pan. Add the chopped white parts of the green garlic and sauté until lightly browned. This tempering adds a fragrant depth of flavor.

  • Pour the green garlic tempering over the Sai Bhaaji in the cooker. Close the lid briefly to allow the flavors to infuse.
