Ingredients
- 1/2 L Milk
- 2 tbspn Sugar
- 1/4 tsp Cardamom (Elaichi)
- 1 pinch Saffron Strands
- 1/2 cup Water
- 5 tbspn Honey (or syrup for syrup)
- 4 slices bread
- 5 Almonds (flakes)
- 5 Pistachio (pistachu flakes pistachu)
- Charoli (chironjiseeds-1/4tspn charoli)
- Sprinkling (or honey honey for)
- 2 tblspn Clarified Butter (Ghee, or oil oil)

Instructions
- Heat water and honey in pan, add the saffron strands once the water starts boiling. Once the honey syrup turns a little thick. Put off the stove and keep aside.
- In an another pan, boil the milk in medium flame until the milk is reduced to about 1/4th of its original quantity.
- Do not forget to stir continuously, once the milk is reduced, add cardamom powder, sugar,saffron mix well. Continue to heat it while stirring continuously for 5 more minutes.
- Remove from heat and set aside. Now take the bread slices and cut them into triangles.
- Heat ghee/oil in a pan and shallow fry the bread till they are crisp and golden brown on each side. Once the bread slices are fried, drain them on paper towels after it soak each slice in the honey syrup for about a minute.
- Now pour rabri on serving dish,arrange bread slices and pour more rabri over the bread slices.
- Garnish with charoli(chironji)seeds,pistachu and almond flakesand and sprinkle little honey over it.
- serve the royal shahi tukda with the godness of honey.
Recipe Notes
you can also served it with chilled rabri.
you can also bake or airfried the bread slices.
you can take whole wheat bread instead of white bread.
Additional Tips
- For extra crunch and a beautiful presentation, lightly toast slivered almonds and pistachios, then sprinkle them over the assembled Shahi Tukda just before serving.
- If you prefer a lighter version, air-fry or bake the bread slices instead of deep-frying to achieve crispiness with less oil.
- To intensify the saffron aroma, soak saffron strands in a tablespoon of warm milk for 10 minutes before adding to the rabri mixture.
- Prepare the rabri (thickened milk) a day ahead and chill it in the refrigerator; this not only develops deeper flavors but also allows for quick assembly when guests arrive.
