  • Combine flour, chilled butter, mixed herbs, red chili flakes, ginger-garlic paste, and salt in a bowl. Cut the butter into the flour mixture using a pastry blender or your fingers until it resembles coarse crumbs.
  • Gradually add ice water, mixing until the dough just comes together. Do not overmix.
  • Form the dough into a disc, wrap in plastic wrap, and chill for at least 30 minutes.

Prepare the Palak Paneer Filling

  • Heat butter in a pan. Sauté chopped onions until softened.
  • Add ginger-garlic paste and red chili flakes; cook for a minute.
  • Stir in mashed potatoes, crumbled paneer, chopped spinach, mixed herbs, salt, and pepper. Cook until heated through and slightly thickened.
  • Remove from heat and stir in mozzarella cheese. Set aside to cool.

Assemble and Bake the Pie

  • Preheat your oven to 180°C (350°F).
  • On a lightly floured surface, roll out half of the chilled dough into a large circle (approximately 12 inches in diameter).
  • Transfer the dough to a baking sheet lined with parchment paper.
  • Spoon the Palak Paneer filling onto the center of the dough circle.
  • Roll out the remaining dough into a slightly smaller circle.
  • Carefully place the second dough circle over the filling. Press the edges to seal.
