Ingredients
For the Pastry Crust
- 250 gm All-Purpose Flour
- 125 gm Butter chilled, cubed, unsalted
- 1 tsp Herbs dried, mixed
- 1/2 tsp Chili Flakes red
- 1 tbsp Ginger-Garlic Paste
- 5-7 Salt to taste
- 5-6 tbsp Water as needed
For the Palak Paneer Filling
- 1 tbsp Butter unsalted
- 1/2 cup Onion finely chopped
- 1/2 tsp Ginger-Garlic Paste
- 2 medium Potato boiled and mashed
- 1/2 cup Cottage Cheese crumbled
- 1 cup Spinach and finely chopped, blanched, squeezed dry
- 1/2 tsp Chili Flakes red
- 1 tsp Herbs dried, mixed
- 1/2 cup Mozzarella Cheese shredded
- 5-7 Salt to taste
- 1/4 tsp Pepper black, ground
- 1 Egg for egg wash
Instructions
Make the Pastry Crust
- Combine flour, chilled butter, mixed herbs, red chili flakes, ginger-garlic paste, and salt in a bowl. Cut the butter into the flour mixture using a pastry blender or your fingers until it resembles coarse crumbs.
- Gradually add ice water, mixing until the dough just comes together. Do not overmix.
- Form the dough into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
Prepare the Palak Paneer Filling
- Heat butter in a pan. Sauté chopped onions until softened.
- Add ginger-garlic paste and red chili flakes; cook for a minute.
- Stir in mashed potatoes, crumbled paneer, chopped spinach, mixed herbs, salt, and pepper. Cook until heated through and slightly thickened.
- Remove from heat and stir in mozzarella cheese. Set aside to cool.
Assemble and Bake the Pie
- Preheat your oven to 180°C (350°F).
- On a lightly floured surface, roll out half of the chilled dough into a large circle (approximately 12 inches in diameter).
- Transfer the dough to a baking sheet lined with parchment paper.
- Spoon the Palak Paneer filling onto the center of the dough circle.
- Roll out the remaining dough into a slightly smaller circle.
- Carefully place the second dough circle over the filling. Press the edges to seal.
- Cut slits around the edges of the top crust and fold the cut strips over the filling to create a decorative sunflower pattern.
- Brush the top crust with egg wash.
- Bake for 40-45 minutes, or until the crust is golden brown and the filling is heated through.
