Additional Tips
- For an extra burst of flavor and color, gently brush the tops of the whoopie pies with warm milk infused with a few strands of saffron before baking; this enhances the kesar aroma and gives a beautiful golden sheen.
- If you prefer a crunchier texture, sprinkle chopped toasted almonds or pistachios on the filling before sandwiching the pies together for a delightful contrast to the soft cookies.
- To make these whoopie pies vegan-friendly, substitute dairy milk with almond milk and replace milk powder with coconut milk powder; use a plant-based custard powder for the filling.
- Store assembled whoopie pies in an airtight container at room temperature for up to two days, or refrigerate for up to a week; allow them to come to room temperature before serving for the best flavor and texture.
