Kale Salad with Heart of palm and citrus vinaigrette is one of those raw kale salad recipes which is filled with the nutrition and health benefits. Known as the "queen of the greens" it's the powerhouse of nutrition as it is high in fibre, low in calories and zero fat. It beats the Beef in its iron content and so its also called "New Beef". Ingredients
  

  • Kale Leaves- Fresh double washed chopped gently 4 cups
  • Hearts of Palm – 1 can can use Reese Brand if available cut into one inch cylinders
  • Mandarin Oranges – Peeled individual sections 1 cup
  • Red Onion- 1 thinly sliced
  • Carrot - 1 Julienned thin slice
  • Walnuts – Roasted cooled, chopped 4 tbsp.
  • For Kale Salad Dressing -
  • Olive oil – 4 tbsp.
  • Fresh lemon juice - 2 tbsp.
  • Honey - 1 teaspoon
  • Lemon zest grated Lemon skin - 1 Tablespoon
  • Fresh ground pepper - 1 / 4 teaspoon
  • Red chili flakes 1 Tablespoon
  • Salt

Instructions
 

  • In a small bowl whisk together the olive oil, lemon zest, lemon juice, honey, pepper and salt.
  • In another salad bowl toss together chopped Kale, orange portions, red onion slices, julienned carrots, hearts of palm and red chili flakes
  • Mix the dressing gently with the salad ingredients and portion into 4 salad bowls
  • Sprinkle with roasted walnuts.
