Spinach Salad With Lemon Vinaigrette

Spinach is a super power food, it consists iron , calcium, magnesium, folate and lots of vitamin. It is low in cholesterol and fat. I powered it up with chia seeds, pineapple, tomatoes, lemon and olive oil. Each of the ingredients has it own nutrition value. A bowl of spinach salad is good to start your day in fresh and power way.

  • 1/2 cup spinach leaf washed
  • 1/8 cup diced tomato
  • 1/4 cup small pineapple chunks
  • 2 tbsp sliced onion
  • 2 tbsp chia seeds
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp black pepper powder
  • Salt for seasoning


  • In a bowl add spinach leaf, onion,tomato and pineapple pieces.
  • In a small bowl add lemon juice, olive oil, salt and black pepper. Mix well and pour over the spinach bowl.
  • Sprinkle chia seeds and mix all thing properly. It can be freeze up for minutes or can serve as it is.
