Gajar ka halwa or carrot halwa is very famous Indian dessert recipe which is usually prepared in winter months. It is a traditional slow cooked recipe with just carrots, milk, ghee, sugar and a few dry fruits. Gajar ka halwa is made with varied ingredients like with or without milk, with milkmaid, with khoya etc. It depends on the taste and flavour of each ingredient that enhances the richness of gajar ka halwa.

Ingredients
  

  • Grated Carrots – 2 kgs
  • Desi ghee – 2 tsp
  • Milk – 1 glass
  • Sugar – 2 cup
  • Cream/ Malai – 1 cup
  • Nuts – 2-3 tsp Cashewnuts/ almonds/ raisins

Instructions
 

  • In a kadai or non-stick pan, cook complete quantity of carrot with milk on medium flame. It will take around an hour for carrots to get soft. Keep on stirring in between.
  • Once carrots get soft and tender, add sugar. Sugar will leave water. Cook the halwa till water evaporates. Continue cooking on medium flame.
  • After halwa dries up, add cream and cook for another 15-20 minutes. At this stage ensure to stir the halwa continuously as there is tendency to get stick at edges.
  • As a last step, add desi ghee for glazing and cook for 10 minutes till the halwa leaves oil in the pan.
  • Garnish the halwa with chopped or sliced dry fruits and serve hot.

  • Instead of Malai or cream, khoya can be added as well.
