- Scoop out the watermelon flesh and discard the seeds. Cut a small portion of the rind from the bottom to create a stable base, if desired, for serving.
- In a blender, combine the scooped watermelon and sugar. Blend until smooth. Pour the blended watermelon mixture into a freezer-safe container or back into the hollowed-out watermelon rind. Freeze for at least 2 hours to firm up.
- In a mixing bowl, combine the hung curd (or Greek yogurt), low-fat cream, and salt. Using a hand mixer or whisk, beat until light and fluffy. This incorporates air for a creamier texture.
- Remove the partially frozen watermelon from the freezer. Pour the creamy curd mixture over the frozen watermelon layer. Gently swirl with a knife or toothpick for a marbled effect, if desired. Top with a few reserved watermelon cubes. Return to the freezer for another 2-4 hours, or until completely solid.
- Once frozen, slice and serve. Garnish with fresh mint sprigs, if desired.
