Finger Millet (Ragi) Cookies

I love simple and healthy cookies. So is my mom. she brought some chakki fresh finger millet flour and I could not stop myself from baking these crunchy cookies. Finger millet cookies is baked using finger millet flour, whole wheat flour, palm sugar and cardamom. My house smells so divine.….Yummy!

Ingredients
  

  • ½ cup finger millet flour
  • ½ cup whole wheat flour
  • 1 tablespoon corn flour
  • ½ cup unsalted butter room temperature - 100 gm
  • ¼ cup + 1/8 cup powdered palm sugar
  • ¼ tsp cardamom powder
  • 1/8 cup finely chopped almonds

Instructions
 

  • Sieve finger millet flour, whole wheat flour and corn flour. Set aside in a bowl.
  • Cream butter and sugar until fluffy.
  • Mix the cardamom powder.
  • Gently mix the sifted ingredients to the butter sugar mixture. Just bring all the ingredients together using a spatula. Do not knead like chapathi dough.
  • Cling wrap the cookie dough and refrigerate for 30 minutes to 1 hour.
  • Preheat oven @ 190c
  • Align a baking tray with parchment sheet.
  • Design the cookies using cookie cutter or simply make small balls out of the dough, gently press and place on the prepared baking tray. Sprinkle the chopped almonds on the cookies.
  • Bake for 17 – 20 minutes @ 190c.
  • After 2 minutes, place the cookies on the cooling rack and allow them to cool completely.

Notes

The cookies will be soft immediately out of the oven. Once the cookies are completely cooled down, they will turn crunchy.
