Ingredients
 

For the Kebab Mixture

  • 500 gm Hung Yogurt ensure the curd is well-hung for a firmer texture. vegan yogurt should be thick and well-drained., or vegan yogurt
  • 2 Potato large, boiled and mashed
  • 200 gm Cottage Cheese can be substituted with firm tofu, indian cottage cheese, pressed and crumbled.
  • 1 tsp Salt rock salt preferred, adjust to taste
  • 4 Chili finely chopped, green
  • 1 tbsp Coriander fresh, finely chopped
  • 1 tsp Chili Powder adjust to your spice preference, red
  • 1 cup Fox Nut fox nuts, roasted and finely ground
  • 1 cup Peanuts roasted and finely ground
  • 1 tbsp Lemon Juice freshly squeezed

For Frying

  • 2 tbsp Oil for shallow frying. vegetable or canola oil recommended.

Prepare the Kebab Mixture

  • Combine hung curd (or vegan yogurt), mashed potatoes, chena (or tofu), ground makhana, ground peanuts, salt, red chili powder, green chilies, coriander, and lemon juice in a large bowl. Mix thoroughly until a smooth, cohesive dough forms.

Shape and Fry the Kebabs

  • Roll the mixture into small, oval-shaped patties (tikkis). Heat oil in a shallow pan or tava over medium heat. Gently place the kebabs in the hot oil and shallow fry until they turn golden brown on both sides, about 2-3 minutes per side. Ensure they are cooked through.

Serve

  • Remove the kebabs from the pan and serve hot. Garnish with fresh coriander, if desired, and serve with your favorite chutney.
