Instructions

  • Take the quinoa flakes and oats in a grinder and grind to a fine powder.
  • Next, in a bowl, mix together all the dry ingredients, that is, the ground quinoa oats mix, wholewheat flour, baking powder, baking soda, salt and cocoa powder. Mix well.
  • Next in another bowl, beat eggs until light and creamy.
  • Add in the cane sugar to this and beat again.
  • Next add the vanilla essence and oil and mix well.
  • Now slowly add the dry ingredients in to the wet mixture in parts, adding little milk in between.
  • Meanwhile preheat the oven to 180 degree centigrade.
  • Coat the black raisins with little wholewheat flour to avoid them sinking in the batter.
  • Then add the black raisins and chocolate chunks into the batter and give a slight mix.
  • Now grease the cupcake moulds or line them with cupcake liners.
  • Scoop in 2-3 spoon fulls of the batter into the moulds (fill them only little less than 3/4).
  • Bake the cupcakes for 20 minutes, until a toothpick inserted comes out clean.
  • Allow to cool.
  • Enjoy the chocolatey cupcakes with a cup of hot tea.
