Ingredients
Dough
- 1 cup Whole Wheat Flour whole
- 1.5 tsp Salt or as per taste
Filling
- 150 gm Cottage Cheese crumbled
- 1/2 cup Potato mashed
- 1/2 cup Peas boiled, green
- 1/2 tsp Chili Powder red
- 2 tsp Cumin Seeds roasted
For Cooking
- Ghee ghee, for shallow frying
Instructions
- In a large bowl, combine the whole wheat flour and salt. Gradually add water and knead until a smooth and pliable dough forms. This will take about 5-7 minutes. Cover the dough and let it rest for at least 30 minutes. This allows the gluten to relax, resulting in softer parathas.
- In a separate bowl, combine the crumbled paneer, mashed potato, boiled green peas, red chili powder, and roasted cumin seeds. Mix well to ensure the spices are evenly distributed throughout the filling.
- Divide the dough into equal-sized balls. Roll each ball into a thin circle. Place a portion of the paneer filling in the center of the circle. Bring the edges of the dough together to enclose the filling completely, pinching and sealing tightly to prevent leakage.
- Heat a flat griddle or tawa over medium heat. Lightly brush the surface with clarified butter (ghee). Place the filled dough ball on the hot tawa and cook for 2-3 minutes per side, or until golden brown spots appear and the paratha is cooked through. Pressing gently with a spatula helps ensure even cooking.
- Serve the hot Paneer Paratha with your favorite vegetable curry, chutney, or raita. These parathas are also delicious on their own and are perfect for packing in a lunchbox or enjoying on a picnic.
Recipe Notes
Good To Know
- For extra flavor and a slight crunch, add finely chopped onions and fresh coriander leaves to the paneer filling before stuffing the parathas.
- If you prefer your parathas with a hint of tang, mix a teaspoon of amchur (dry mango powder) or a squeeze of fresh lemon juice into the filling.
- To ensure even cooking and prevent the filling from leaking, dust each stuffed dough ball lightly with flour and roll gently, starting from the edges and working inward to maintain a uniform thickness.
Expert Tips
- For a richer flavor, try using a combination of grated paneer and crumbled paneer in the filling. This adds different textures and enhances the overall taste.
- While cooking the parathas, use medium heat and cook them until golden brown spots appear on both sides. This ensures they are cooked through and crispy.
- Serve these delicious paneer parathas with a dollop of yogurt or your favorite chutney for a complete and satisfying meal.
Storage Instructions
- Leftover parathas can be wrapped in a clean kitchen towel and stored in an airtight container.
- Briefly reheat on a hot tawa or skillet to restore softness before serving.
