Dahi kachori is crispy snack prepared using all purpose flour & semolina and a crispy large size poori is made which is filled with sweet & spicy chutneys, veggies & nuts of your choice and curd being the main ingredient.

Ingredients
- All purpose flour 1 cup 250 ml
- Fine variety semolina 1/4 cup
- Hot oil 3 tbsp
- Salt
- Oil for deep frying
- Boiled potatoes 2
- Boiled ground nuts 1/4 cup
- Green chutney as required
- Sweet tamarind chutney as required
- Curd 1 1/2 cup
- Onion finely chopped 1
- Tomato finely chopped 1
- Chaat masala powder as required
- Sev for topping
- Coriander leaves finely chopped for garnishing
- Pomegranate for topping
- Baking soda a pinch for the dough

Instructions
- In a mixing bowl add all purpose flour, semolina, baking soda and salt. Mix well.
- Add 3 tbsp hot oil on flour and combine. Once you get crumble texture add water in little quantities and start kneading the dough.
- The dough should be stiff otherwise the poori will not turn crisp. Cover it with a damp cloth and rest for half an hour.
- Meanwhile prepare all the ingredients that is required for filling the kachori which is mentioned above in the ingredients column.
- After the resting period of the dough heat oil for deep frying. Take a medium lemon size ball and roll it evenly from all the sides to the size of large poori.
- When oil is hot enough leave a single poori onto oil and splash oil above it so that it puff up well.
- You have to fry the poori in medium to low flame both the sides till it turn golden and crisp. It will take 4 to 5 minutes for one poori to get fry.
- Repeat the same procedure to fry rest of the poori's and allow it to cool completely.
- Once the poori is cooled it is time to add filling for the kachori. Take one crispy poori and place in a serving plate. Make a big hole in the upper part of it.
- First add few boiled potatoes and ground nuts.
- Further add green chutney and sweet tamarind chutney.
- Further add 2 tbsp of curd and sprinkle some salt.
- Now add few finely chopped onions & tomatoes. Also sprinkle a pinch of chaat masala powder.
- Now again add a tablespoon of curd followed by sev, both the chutneys, pomegranate and finely chopped coriander leaves.
- Serve delicious Dahi Kachori immediately specially for evening tea time.
Notes
Making a crispy poori is the key factor in preparing dahi kachori. And for that your dough should be of right consistency and it should be fried in a medium to low flame.
