This is very light and refreshing Cucumber salad. Its ideal for summers. Its a great side for anything you have on your grill. So if you prefer light and healthy meal you can surely try this.

Ingredients
  

  • 2 Cucumber 2 medium sized peeled
  • 1 Onion sliced
  • 2 tbsp Lemon Juice
  • 1 tbsp Olive oil
  • 10 to 15 Mint Leaves
  • 1 tbsp Coriander leaves chopped
  • 1 tsp Chilly flakes
  • Sea salt according to taste

  • Take Onion slice it and keep aside

  • Take cucumber with a help of vegetable peeler, Shave cucumber in wide ribbons. repeat the step with rest of the cucumber till it reaches seeds. turn the cucumber and repeat the step

  • In a bowl take cucumber shavings, sliced onions and chopped coriander

  • For dressing in a mixer add cucumber seeds, lemon juice, olive oil, chilly flakes, sea salt and mint leaves blend this nicely.

  • Pour the dressing on salad and toss it gently.

  • To make this salad more crunchy and crispy put cucumber shavings in ice cold water.
