Instructions

Prepare the Paneer Filling

  • Combine mashed paneer, grated coconut, powdered sugar, chiraunjee, and cardamom powder in a bowl. Mix thoroughly and set aside.

Make the Wrap Batter

  • In a separate bowl, whisk together whole wheat flour, semolina, and salt. Gradually add water, mixing until a smooth, pourable batter forms. The consistency should be similar to pancake batter.

Cook the Wraps

  • Heat a lightly oiled griddle or frying pan over medium heat. Pour a small amount of batter onto the hot surface, spreading it thinly to form a circle or oval. Cook until lightly browned on both sides.

Assemble and Serve

  • Once the wraps are cool enough to handle, spread a layer of the paneer filling over one half of each wrap. Add a spoonful of malai on top of the filling. Fold the other half of the wrap over the filling to enclose it. Serve immediately or at room temperature. You can cut the wraps into smaller segments for easier serving.

Expert Tips for the Best Malai Paneer Wraps

  • For extra flavor, you can add a pinch of saffron strands to the paneer filling.
  • If you don’t have malai, you can substitute with heavy cream or even a mixture of cream cheese and milk.
  • To make the wraps ahead of time, cook them and store them in an airtight container at room temperature. Fill and fold them just before serving.
  • Experiment with other nuts or seeds in the filling. Chopped pistachios or cashews would also be delicious.
