when you think of a cheesecake, the first thing that comes to your mind is a creamy cream cheese layer poured on top of a crispy biscuity base. plattershare gave me coconut sugar so i decided to flavour my cheesecake with coconut and give it a twist. so check this out,

Ingredients
- coconut sugar- 1/2 cup
- condensed milk- 1/4 tin
- paneer or cottage cheese- 1 cup
- coconut milk- 1/2 cup
- elaichi powder- 1 tsp
- milk powder- 1/2 cup
- digestive biscuits crushed- 1 pack
- melted butter- 3 tbsp
- chopped nuts- to garnish

Instructions
- add melted butter to crushed biscuits and push the mixture on the bottom of a cheesecake pan like a springform pan or a tart pan.
- for the coconut kalakand, add coconut milk, condensed milk, milk powder, crumbled paneer, coconut sugar in a bowl and mix well,
- pour the mixture in a pan and cook till it becomes thick, at first it will be thin, but then it would gradually thicken. also add elaichi powder,
- keep cooking till the mixture becomes thin and starts to leave the sides of the pan. the mixture would have become grainy,
- pour the kalakand on top of the biscuit base and put it in the fridge till set. garnish with chopped nuts and serve chilled.
