About Bhindi Masala
Quick lunch recipe - Bhindi Masala goes well with plain rice and Dal Tadka or Arhar dal. It is one of the comfort food combination which can be served during lunch or dinner. Bhindi or lady finger or okra is rich in fiber and must be included in the diet. There is a trick to make bhindi and Geeta biswas shares it at the end of the recipe.

Ingredients
- 250 gm Okra bhindi
- 2 tsp Garlic Paste
- 2 tsp Ginger Paste
- 2 tsp Coriander Powder
- 1 tsp Cumin Powder
- 1 tsp Red chili powder
- 1 tsp Dry Mango Powder
- 1 tsp Turmeric Powder
- Oil as required
- 1-2 tsp Salt or as per taste

Instructions
- Wash and pat dry the lady fingers with the kitchen towel. Cut into small pieces as shown in the picture. Heat a heavy-bottom pan(preferably iron kadai or pan) add 1 tablespoon of oil and shallow fry the bhindi and keep them separate.
- In the same pan, heat 1 tablespoon of oil, add ginger paste stir for a few seconds followed by garlic paste, a pinch of asafoetida, coriander powder, cumin powder, red chilli powder, turmeric powder and stir continuously.
- Sprinkle little water if masala is sticking to the pan. Let it fry.
- Then add shallow fried bhindi season with salt and mango powder(Amchur Powder) Mix well and toss. Serve with fresh coriander leaves.
Recipe Notes
- While cutting Bhindi put mustard oil on your palms so that Bhindi does not stick to your hand and knife.
- Wash and pat dry with the Kitchen towel before cooking Bhindi otherwise, it will become very sticky.
