Instructions

  • In a large bowl, combine the all-purpose flour, baking soda, and salt.
  • Add the hot vegetable oil to the dry ingredients. This helps create a flaky texture.
  • Gradually add water, mixing until a stiff dough forms. Knead for 2-3 minutes until smooth. Set aside.
  • If making homemade rose water, combine water and fresh rose petals in a saucepan. Simmer until the liquid reduces by half. Strain and set aside.
  • In a separate saucepan, heat the sugar over medium heat, stirring constantly, until it melts and forms a syrup. Be careful not to burn it.
  • Add the roasted beetroot, ground peanuts, and ground sesame seeds to the sugar syrup. Stir well to combine.
  • Continue cooking and stirring until the mixture thickens and pulls away from the sides of the pan. Remove from heat and let it cool.
  • Divide the dough into small equal portions. Roll each portion into a thin circle.
  • Cut each circle in half. Fold each semicircle into a cone shape, moistening the edges with water to seal.
  • Fill each cone with the prepared beetroot and rose filling. Seal the edges tightly to prevent leakage during frying.
  • Heat vegetable oil in a deep pan over medium heat. Carefully place the samosas in the hot oil.
  • Fry the samosas until they turn golden brown and crispy, turning occasionally for even cooking. This ensures a perfectly cooked and crispy exterior.
  • Remove the samosas from the oil and drain on paper towels to absorb excess oil. Serve hot and enjoy!

Recipe Notes

Good To Know

  • For an extra layer of flavor and texture, fold in a handful of chopped pistachios or almonds into the beetroot and peanut filling just before sealing the samosas.
  • If you want a more pronounced rose flavor, brush the finished, slightly warm samosas with a mixture of rose syrup and a splash of lemon juice for a glossy finish and added fragrance.
  • To achieve an even crunchier shell, let the shaped samosas rest uncovered in the refrigerator for 20-30 minutes before frying; this helps the pastry dry out slightly and crisp up beautifully.
  • Serve the samosas warm with a dollop of lightly sweetened hung curd or rose-flavored whipped cream for an elegant dessert presentation.

Expert Tips

  • For a savory variation, omit the rose flavorings and add a pinch of chili powder and garam masala to the filling.
  • Don't overcrowd the pan when frying the samosas. Fry in batches to ensure even cooking and a crispy exterior.
  • If you're short on time, you can bake the samosas instead of frying. Brush them with a little oil and bake at 375°F (190°C) for 20-25 minutes, or until golden brown and crispy.

Storage Instructions

  • Store leftover samosas in an airtight container at room temperature for up to 2 days. Reheat in a preheated oven or air fryer for a few minutes to restore crispness.
