Ingredients
 

For the Tamarind Extract

  • 1 small ball Tamarind approximately 1 inch diameter; can substitute with 1 tbsp tamarind paste or 1 amla (indian gooseberry)
  • 1 cup Water

For the Spice Paste

  • 1 tbsp Peppercorns black, whole peppercorns are preferred for a superior flavour.
  • 1 tsp Cumin cumin seeds
  • 1/2 tsp Coriander coriander seeds
  • 3.5 pods Garlic

Prepare the Tamarind Extract

  • Soak the tamarind in 1 cup of warm water for 20 minutes. Extract the pulp by squeezing the tamarind and discarding the seeds. Set aside.

Make the Spice Paste

  • Grind together the black peppercorns, cumin seeds, and coriander seeds into a coarse powder. Add the garlic cloves and grind coarsely. Do not make it into a smooth paste. Set aside.

Prepare the Rasam

  • In a saucepan, combine the tamarind extract, chopped tomato, turmeric powder, and salt.

Simmer the Rasam

  • Add the prepared spice paste and curry leaves to the saucepan. Bring to a boil over medium heat, then reduce heat to low and simmer for 10-15 minutes, or until the tomatoes are soft and mushy. Stir occasionally.

Finish and Garnish

  • If the tomatoes are still hard after simmering, mash them gently with a spoon. Add 1 cup of water and bring to a boil. Remove from heat when froth starts to form on the top.

Tempering (Optional)

  • Heat ghee or oil in a small pan. Add a pinch of mustard seeds and curry leaves. Once they splutter, pour the tempering over the rasam.

Serve

  • Garnish with chopped coriander leaves. Cover and let it rest for a few minutes before serving hot with steamed rice.
