Ingredients
  

  • 1/2 cup All purpose Flour
  • 1/2 cup Wheat Flour
  • 1/2 cup Pumpkin Puree
  • 2 tablespoon Organic Chia seeds
  • 4 tablespoon Sugar or to taste
  • 3/4 cup Milk
  • 2 teaspoon Pumpkin Pie Spice
  • 1 teaspoon Baking powder
  • 1 pinch Salt
  • 1 teaspoon Apple cider Vinegar

Instructions
 

  • Sift the flour, wheat flour and baking powder in a bowl and add rest of the dry ingredient to it. Make a well in the center.
  • Now add the pumpkin puree, milk, vinegar to the dry ingredients and mix well with a hand whisk. Don't over mix, if the batter is too thick add a little milk.
  • Let the mix sit for 10 mins for the Chia seeds to work its magic.
  • Meanwhile heat a non stick frying pan and over medium low heat brush melted butter or oil and drop tablespoons of the batter into the pan.
  • Allow room for the Pikelets to spread, you can make 5-6 Pikelets on the pan together.
  • Cook the Pikelets till small bubbles appear on the surface and its golden brown underneath.
  • Turn them over and cook on the other side. Repeat the process with the remaining batter.
  • Serve hot with jam, maple syrup, honey or pancake syrup , with fruits or just as it is.

Notes

You can make pumpkin pie spice at home by adding  
  • 2 tsp Cinnamon powder,
  • 1/4 tsp dry Ginger powder,
  • 1/4 tsp cloves powder,
  • 1/4 tsp nutmeg powder and
  • 1/4 tsp all spice
