Sirini French Toast

French toast is one of those much loved recipes that works both for breakfast as well as a delicious snack ! But sadly due to the eggs, one is unable to enjoy this treat on festive days. However, this eggless version with flavors inspired by the 'Sirini', an offering that is popular in Odisha, will more than make up for the original version !!

Ingredients
  

  • 3 slices of brown bread
  • 1 ripe banana
  • 2/3 cup thick coconut milk
  • 1/4 tsp grated ginger
  • 1/5 tsp freshly powdered peppercorn
  • 1 1/2 tablespoon honey
  • banana slices for garnishing optional
  • 1 tsp canola oil for cooking
  • 2 tsp whole wheat flour or semolina if you want it crispy

Instructions
 

  • Cut off the sides of the bread and slice into two halves.
  • Mash the banana in a wide bowl. Add coconut milk, wheat flour, ginger, peppercorn powder and 1 tbsp honey. Mix well.
  • Heat a non-stick frying pan. Drizzle a little bit of oil
  • Dip each half slice into the batter and place on the frying pan. Cook on a low flame till light brown or till a few dark brown spots develop.
  • Remove from the pan. Drizzle with some more honey and banana slices. Serve hot !!
