Ingredients
  

  • All purpose flour - 1.75 cups
  • Baking powder - 1.5 tsp
  • Baking soda - 1/4 th tsp
  • Salt - 1/2 tsp
  • Unsalted butter - 3/4 th cup
  • White sugar - 1/2 cup
  • Brown sugar - 1/2 cup
  • Eggs - 3
  • Vanilla extract - 1 tsp
  • Milk - 1/3 rd cup
  • Instant coffee - 1.5 tbsp dissolved in 1 tbsp of boiling water
  • Coarsely chopped deseeded dates - 1/2 cup
  • Coffee frosting : Unsalted butter - 1/2 cup
  • Icing sugar - 2 cups
  • Vanilla extract - 1/2 tsp
  • Instant coffee - 1 tsp dissolved in 1 tsp of boiling water
  • Cream - 1 tbsp

Instructions
 

  • Whisk the butter (should be at room temperature). Once it is fluffy enough,add the sugars and whisk for another 3-4 minutes. Then add the eggs one by one,while whisking the butter mix.
  • Whisk till the mixture is foamy enough.Meanwhile sieve the flour,baking soda, baking powder and salt together,keep aside.
  • Now add the dissolved coffee into the egg mixture as well as vanilla extract. Whisk well. Now fold in the flour mix and the milk in three parts alternating with each other.
  • Finally fold in the dates and give it a final mix.Divide the batter into 2 parts, pouring each part into a greased 23 cm baking tin. 7..Place the tins in a preheated oven at 180 degree Celsius for 30 minutes or until a toothpick comes out clean.
  • Rest the cakes once they are done.To make the frosting, whisk the butter (should be at room temperature), slowly add the icing sugar while whisking it.
  • Then add the cream to make it smooth.Finally add the vanilla extract and the coffee mix and whisk till desired consistency is attained
  • Pour the mix into piping bags and frost the cakes accordingly by putting the frosting on one cake, topping it with the other cake and decorating the top with more frosting.
