Ghee Rice

Ghee Rice is a South Indian Style of aromatic rice prepare using ghee and basic spices. A perfect one pot meal which is delicious and easy to prepare.

- Wash and soak the rice for 15-20 mins and set aside.
- Heat 4 tbsp of ghee in a heavy bottom pan, add Cashew nuts and fry till golden brown. Then fry raisins until it puffs up. Keep both aside.
- Now add onion to the same ghee and fry till caramelized. It will take around 5-10 mins. Take out and keep it aside.
- Add cardamom, cloves, cinnamon, curry leaves and bay leaf to the same pan and allow it to splutter.
- Add the drained rice and salt to it and fry for 2-3 mins. Add 1.5 cup of hot water to it and allow it to boil.
- When rice is done add the remaining ghee, caramalised onion, fried cashewnuts and raisins reserving some for garnish.
