Kesar Pista kulfi is a very famous and tasty frozen Indian dessert prepared with thickened milk, saffron, pistachio and other dry fruits. This kesar pista kulfi is very easy to make and is beloved by children and adults alike. Kesar pista kulfi brings an instant relief during summers with its cream and softness.

Ingredients
  

  • Full fat milk 1ltr +2 Tbsp
  • Sugar 1/4 cup
  • Cream 1/4 cup
  • Pistachios chopped. 10 no.
  • Saffron strands 1/2 Tsp
  • Cardamom powder 1/2 Tsp

Instructions
 

  • Add 2 Tbsp off Luke warm milk in a bowl add saffron strands and keep aside.
  • In a thick bottomed pan take full cream milk and bring to boil.
  • Once the milk comes to a boil, add cream and give a good stir.
  • Simmer milk for 30 minutes and keep stirring in between.
  • Next, add sugar and give a good mix.
  • Simmer for 5 minutes or till the milk thickens completely.
  • Now add chopped pistachios, saffron milk and cardamom powder.
  • Mix everything well and simmer further more for 5 minutes.
  • Turn off the flame and allow the thickened milk to cool completely.
  • After the milk is cooled completely, transfer them to moulds or to a plastic glass.
  • Freeze the kulfi for atleast 6 hours or overnight.
  • After 6 hours or more when the kulfi is set completely. Dip mould in warm water. (not more than 30 seconds)
  • Gently, remove the kulfi from the glass / mould and garnish with few chopped pistachios and saffron strands.
  • Serve kulfi immediately.

Notes

  1. Cream is totally optional.
  2. Adjust sugar according to your taste
  3. If you are using cups cover it with aluminium foil or cling wrap.
