Ingredients
For the Idlis (if not using leftover):
For the Tandoori Marinade:
- 4.5 Idli leftover idlis are ideal; if making fresh, use about 1 cup of batter (see instructions above).
- 1/2 cup Yogurt also known as curd, plain
- 1.5 tsp Salt adjust to taste
- 1/2 tsp Ginger Garlic Paste
- 1/2 tsp Chili Powder red
- 1/2 tsp Tandoori Masala
- 1/4 tsp Garam Masala
- 1/4 tsp Cumin seeds, jeera
- 1/4 tsp Coriander powder, dhania
For Serving:
- Chutney or dip, as needed, your favorite variety
Instructions
Prepare the Idli Batter (if not using leftovers)
- Soak urad dal, idli rice, and fenugreek seeds (if using) separately for at least 4 hours. Drain and grind into a smooth batter. Let the batter ferment for 8-12 hours.
Prepare the Tandoori Marinade
- In a bowl, whisk together the yogurt, salt, ginger-garlic paste, red chili powder, tandoori masala, garam masala, cumin seeds, and coriander powder.
Marinate the Idlis
- Cut each idli into 4 long pieces. Pour the marinade over the idlis, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes.
Cook the Tandoori Idlis
- You can cook these in several ways: deep fry in hot oil until golden brown, shallow fry in a lightly oiled pan, or grill until heated through and slightly charred.
