Tortilla is a thin flatbread traditionally made using fine maize flour with lard to keep them utterly soft. They are used in various recipes like enchiladas, quesadillas etc., Mexican cuisine is incomplete without tortillas as they are the most versatile basic component in their recipes. This Multi grain tortilla is a healthier vegetarian option as it uses whole wheat flour, sorghum flour and pearl millet flour as the flour. Further, hot water and oil are used to retain the soft texture as well. Enjoy these healthy tortillas with your favorite stuffing, roll them to make your favorite Mexican recipes accompanied with salsa or bake them to make nachos. Either way it’s delicious and healthy.

Ingredients
- 1 ¼ cup whole wheat flour
- ½ cup sorghum flour
- ¼ cup pearl millet flour
- 1 tsp baking powder
- ¾ tsp salt
- 2 ½ tbsp olive oil or any neutral oil
- ¾ cup hot water

Instructions
- Sieve the flour with baking powder and salt, set aside in a bowl.
- Add the oil and mix gently using your fingers until the mixture resembles bread crumbs.
- Add hot water and knead the dough.
- Cover the dough and rest it for 1 hour.
- Make equal sized balls out of dough and roll each ball as thin as possible.
- On a hot griddle, cook both sides of the tortillas and place them on a kitchen towel covered.
- Stuff them with your favorite filling, roll them and serve!
