Yield / Serves
1 Â¼ cup whole wheat flour
Â½ cup sorghum flour
Â¼ cup pearl millet flour
1 tsp baking powder
Â¾ tsp salt
2 Â½ tbsp olive oil or any neutral oil
Â¾ cup hot water
Sieve the flour with baking powder and salt, set aside in a bowl.
Add the oil and mix gently using your fingers until the mixture resembles bread crumbs.
Add hot water and knead the dough.
Cover the dough and rest it for 1 hour.
Make equal sized balls out of dough and roll each ball as thin as possible.
On a hot griddle, cook both sides of the tortillas and place them on a kitchen towel covered.
Stuff them with your favorite filling, roll them and serve!
