Ingredients
- 1/2 Cup Mulberries about 12
- 10-12 teaspoon simple syrup Refer notes
- 2 teaspoon lime juice
- 6 ounces 180 ml OR 3/4 cup soda water
- Crushed ice to fill the glasses
- Mint sprigs to garnish

Instructions
- Place mulberries in a cup and muddle until berries are broken down.
- Mix in about 5 teaspoons of the simple syrup into the mashed berries. If your prefer a sweeter drink add an additional 1-2 teaspoons of syrup to your drink.
- Next, fill the glass with ice and top the drink off with about 3 oz (90 mls) of water and gently mix everything with a spoon.
- Garish with mint and enjoy!
Notes
For the simple syrup
Start by heating 1/2 cup water and 1/4 cup sugar in a pot and bring to a boil over medium heat, continue to cook down the water to a rapid simmer, until the liquid is slightly thick but runnier than honey. This will take 5 to 6 mins approximately.
Remove from heat and allow to cool to room temperature.
Transfer to a bottle or glass jar, cover and refrigerate till further use.
