  • 1/2 Cup Mulberries about 12
  • 10-12 tsp syrup simple syrup, refer notes
  • 2 tsp lime juice
  • 6 ounces soda water 180 ml OR 3/4 cup
  • 1/2 cup ice crushed, to fill the glasses
  • 2-3 sprigs Mint to garnish


  • Place mulberries in a cup and muddle until berries are broken down.
  • Mix in about 5 teaspoons of the simple syrup into the mashed berries. If your prefer a sweeter drink add an additional 1-2 teaspoons of syrup to your drink.
  • Next, fill the glass with ice and top the drink off with about 3 oz (90 mls) of water and gently mix everything with a spoon.
  • Garish with mint and enjoy!

Recipe Notes

For the simple syrup 
  • Start by heating 1/2 cup water and 1/4 cup sugar in a pot and bring to a boil over medium heat, continue to cook down the water to a rapid simmer, until the liquid is slightly thick but runnier than honey. This will take 5 to 6 mins approximately.
  • Remove from heat and allow to cool to room temperature.
  • Transfer to a bottle or glass jar, cover and refrigerate till further use.
