Family recipes passed down from generation to generation are real treasures for me. And I still enjoy that old method of writing recipes ,tips shared by Mom on my notebook. The joy was same when my Mom gave her old note book 2 year back. Many unsung recipes are there .. Today is such a recipe which my Mom learnt from her old aunt. But I feel how good I may cook , the same dish prepared by my Mom always tastes better. 🙂 I guess we all feel the same way .Isn't it? Today the dish is about "Moringa Leaves", local produce which is found through out the year. We cook the Moringa flowers too. This dish is very healthy and diabetic friendly.

Ingredients
  

  • 4 cup Fresh Moringa leaves
  • 1 cup Fresh grated coconut
  • 1/2 cup Whole green Mung/Moong
  • 1 Small Onion
  • 4 Red Chili
  • 8 Garlic Cloves
  • 1 teaspoon Sugar
  • 1 teaspoon Refined Oil
  • Salt

Instructions
 

  • Soak mung beans for at least 2 hour.Cook in 1/2 cup of water till they are soft and almost done.Add Moringa leaves to it.sprinkle sugar on top and cook for 5 minute.The water must have evaporated.
  • In another pan heat oil.Add sliced onion and saute till they are light brown.
  • Add crushed red chili and crushed garlic to it.Saute for a minute.Add Moringa & mung to it.Add salt and cook for 2 minute at medium flame.
  • Add fresh coconut and cook for another 2 minute at slow flame.It's ready to serve

Notes

It’s enjoyed as a side-dish in a Meal in Odisha.
