Millet flour is so versatile that you can make a variety of breakfast recipes.
Bake a healthy waffle with the goodness of the secret ingredients (Millets [Proso, Kodo, Finger, Foxtail, Little, Barnyard], Amaranth flour and Whole wheat flour). Enjoy these waffles with fresh fruits, topped with some maple syrup / honey.

  • Mix 1 tbsp of flax seed powder with 3 tbsp of water in a microwave safe bowl, microwave it for 20 seconds and set it aside.
  • In a large mixing bowl, combine millet flour, corn flour, baking powder, salt and cane sugar. This is the dry mixture.
  • In another bowl, combine warm milk, melted butter, vanilla extract and the flax seed mixture thoroughly. This is the wet mixture.
  • Pour the wet mixture into the dry mixture and mix until no lumps are seen. If necessary add 1 or 2 tbsps of warm milk. This depends on the flour. Rest the batter for 10 minutes.
  • The consistency should be a pour-able consistency.
  • Preheat oven @160c.
  • Grease the waffle mould with butter and pour a ladle full of the batter into each waffle cavity. The batter will start to spread by itself. Fill all the cavities and tap gently.
  • Bake for 15 - 20 minutes at 160c or until the top turns slightly brown.
  • Allow them to cool for few minutes and transfer them to a serving plate.
  • Enjoy the warm waffles with fresh fruits and maple syrup / honey for breakfast!

Recipe Notes

  1. I used a silicone waffle mould for baking. In this case try to place the mould on a baking tray to facilitate even baking.
  2. I used 250 ml measuring cup.
  3. The organic mixed millet flour that I used is a combination of Proso, Kodo, Finger, Foxtail, Little, Barnyard millets, Amaranth flour and organic Whole wheat flour.
