Now we can have dessert while dieting too! This dessert is loaded with goodness of coconut milk, and no oil.
Khanom khrok is fragrant, sweet and the texture is also smooth from the coconut milk. It can also be found in Bangladesh, Myanmar, and Laos.
Of course, portion control is important considering the calorie count of coconut milk, but as a part of a healthy diet it provides necessary fatty acids in addition to other minerals that support weight loss and detoxification.
Rice flour which us gluten free, essential for weight loss.

Ingredients
  

  • 500 ml Coconut milk
  • 375 gm Rice flour
  • 125 gm Brown sugar honey
  • 1 teaspoon vegetable oil for brushing

Instructions
 

  • Place the coconut milk, rice flour and brown sugar in a mixing bowl. Add a pinch of sea salt and whisk until completely smooth.
  • Heat a khao nom kork pan or podu pan (poffertjes pan) to medium heat.
  • Brush each mould or hole with vegetable oil. Before proceeding, make sure the pan is hot, or the cakes will be difficult to remove.
  • Pour the batter into each mould, close the lid and cook for 4-5 minutes, or until the cakes are browned and crisp, but moist in the centre. Using an oiled stainless steel spoon or teaspoon, remove the cakes from the pan.
  • Repeat with the remaining batter.
  • Serve hot.
