The bread pudding is one of those recipes that remind me of my late grandmother's cooking. Simple and yet delicious, it was enough to make us kids clamor for a second helping.
This version which i made recently is a copy with a few healthy additions like Chia seeds and honey instead of sugar.

  • Cut and remove the sides of the bread. Crumble it with your hands and transfer to a mixing bowl.
  • Add warm milk and chia seeds. Soak for about 15 minutes.
  • Break the two eggs into a separate bowl. Add the honey and vanilla essence. Beat it lightly.
  • Pour the beaten eggs over the soaked bread and mix everything together.
  • Grease the sides of a small cake tin. Pour in the mixture and cover the top with a foil.
  • Add 2 1/2 cups of water to a pressure cooker. Place a small stand inside the cooker and put the cake tin over it. Close the pressure cooker lid but without the whistle. Let it sit on a medium flame for about 15 mins.
  • Remove the cooker from the flame and let it stand for 10 mins. Open lid and remove the cake tin.
  • Cut the pudding into small pieces.
  • Drizzle with honey and add some muesli for the crunch ! Serve warm !
